Lemon Potatoes

Lemon Potatoes, inspired by a love of Greek dishes, are a delightful side dish that brings a burst of Mediterranean flavours to your table. These potatoes are roasted to perfection, achieving a golden, crispy exterior while remaining irresistibly fluffy on the inside. Infused with the zesty tang of fresh lemon juice and a blend of aromatic herbs, they perfectly complement any main course.

Ingredients

  • 1.2kg potatoes, peeled and cut into wedges
  • 1/2 cups of vegetable stock
  • 1/2 cup of olive oil
  • 1/3 cup of lemon juice
  • Five teaspoons of minced garlic
  • One tablespoon of dried oregano
  • Two teaspoons of salt
  • Lemon wedges for garnish

Method

  1. Preheat oven to 200°C.
  2. Put the potatoes into a roasting pan with all ingredients (except the lemon garnish)
  3. Coat the potatoes thoroughly.
  4. Roast for 20 minutes, turn the potatoes, and roast for another 30 minutes.
  5. Remove the liquid from the pan, placing it into another oven-safe pan.
  6. Place the potatoes back into the oven for another 35 minutes.
  7. Return the juice pan to the oven for the last 10 minutes to reduce it a little.
  8. Plate the potatoes with the lemon sauce drizzled over them and garnish with lemon wedges.
